Baby Shower Recipes - Tequila Lime Seafood Kebabs

Here is a fun summer recipe that will have your guests asking for the recipe and more! Kebabs are easy finger foods that make parties practical and delicious.
First . . . be sure to pre-soak your skewers in water for 30 minutes prior to grilling to prevent them from burning!
Serves: 9
Here are the yummy ingredients you need:
- 8 ounces of unpeeled large fresh shrimp
- 8 ounces of grouper fillets, cut into 1 inch pieces
- 8 ounces of salmon fillets, cut into 1 inch pieces
- 4 ounces of fresh snow peas
- 1 large red bell pepper, cut into 1 inch pieces
- 1/2 pineapple, peeled, cored, and cut into 1 inch pieces (look for this in the produce . . . you can purchase it done for you)
- 1 tablespoon of grated lime
- 1/4 cup fresh lime juice
- 3 tablespoons orange juice
- 2 tablespoons minced green onions
- 1 1/2 teaspoons chopped cilantro
- pinch of salt
- pinch of ground black pepper
- lime wedges (optional: as garnish)
- Peel shrimp and devein, leaving tails on.
- Combine grated lime, lime juice, orange juice, minced green onions, chopped cilantro, salt and pepper in bowl and mix well. Set aside.
- Alternately thread shrimp, grouper, salmon, bell peppers, snow peas, and pineapple on pre-soaked skewers.
- Place kebabs in a shallow dish and pour mixture over top. Refrigerate for 1 hour, turning occasionally.
- Remove kebabs from marinade. Grill with the lid closed over medium-high heat (350-400 degrees) 6 to 7 minutes each side or until fish flakes with a fork.
Tips: Baste occasionally with marinade while grilling.
Garnish: With lime if desired.
